Pullulan, also called pullulan polysaccharide, is a kind of natural high molecular polysaccharide. Available as a white powder it is water-soluble, odorless, flavorless, nontoxic, and edible.
Pullulan, approved as pharmaceutical excipients by the pharmacopoeia of USA and EU, is widely used in food, pharmaceutics, cosmetics and other fields. In USA pullulan was approved for GRAS certificate. In China pullulan was included in the standard "GB2760" in 2006 and was included in "List for Standard Chinese Names of International Cosmetic Materials" in 2010.
1. Features
Low calorific value, low digestibility; heat-resistant, salt, acid and base resistant; excellent plasticity and lubricating ability, strong adhesive; excellent film-former and film coating, excellent property of air isolation; improve the water retention, activate the Bifidobacterium reproduction, alleviate the constipation symptom.
2. Safety
Pullulan is a natural plant origin polysaccharide without any genetically modified ingredient. It will not cause any biological toxicity and unusual condition. It meets the international requirement of Muslim, Judaism and Vegetarian and can be used safely for food and medicines.
3. Application for food products
Pullulan is used as coating agent, thickening agent, anti-staling agent, forming agent, quality improver, emulsifying agent and so on.
